By aging for 5 months in Chardonnay barrels from Moshin Vineyards in CA and Denver’s Infinite Monkey Theorem (featured in The Wall St Journal, Paste, and USA Today) Signal was brewed to impress. Elevation swaps the tart apple notes found in many white wines to focus on a different side of Chardonnay: smooth vanilla-bean character punctuated by coriander and orange peel. Another sip of this 9.8% ABV luxury brings flavors of candied apricot and baked pears, before a crisp, bone-dry finish.
Though it was crafted in the tradition of the Farmhouse beers of the Wallonia region of Belgium, Signal and its use of American Chardonnay barrels lend a distinctly new-world twist.
