About This Beer
To make this Gueuze-inspired beer, the brewers blended spontaneously fermented Ales from the winters of 2020, 2021, and 2022. Each was crafted from local Pilsner malt, raw wheat, and whole leaf hops. The beers were naturally inoculated with local micro fauna using the brewery’s coolship, and extensively aged in neutral oak barrels before blending. Finally, the finished brew spent 7 months naturally bottle conditioning for effervescent carbonation.
Tasting Notes
Expect a tapestry of flavors to leap from the pour, with hints of grapefruit pith, lemongrass, and underripe peach. Nuances of pickled mango and oaky vanilla should swirl through moderate acidity before succumbing to hoppy bitterness in the finish.
