But once you open this bright brew and get a whiff of the tangy, citrusy, slightly oaky aromas that come pouring out, you’re not gonna want to trade this one away.
Side Project creates the slightly funky lemon zest and stonefruit flavors of Bière du Pays by fermenting with wild yeast from the Missouri countryside AND their own Saison yeast. Several months in neutral-oak wine barrels adds woody nuances and a slight hint of vanilla, along with a very subtle vinous character.
So snag a bottle of Bière du Pays while we have them. Because once this batch is gone, it might be another 2 years before we’re able to get our hands on more.
