About This Beer
They began way back in 2020, when they started developing Wild Ales exclusively for this blend. Most of the components were aged in French oak puncheons, with a small amount luxuriating in a single French oak wine barrel.
They carefully combined one, two, and three year old brews, delicately blending beers made with aged whole leaf hops, and balancing things with slightly breadier brews crafted using unmalted wheat.
Tasting Notes
The result is a tangy, bright, supremely sippable and enchantingly effervescent beer. Hints of cut hay and lemon grass sparkle against nuances of wild funk and a bit of hoppy bitterness.
