Taxman nails the vivid depth of flavor by using three types of apples, one of which is the super-rare Arkansas Black fresh from a nearby farm. The farm delivers fresh-pressed apple juice to Taxman, sans sulfites or preservatives. The brewers blend it with a Sour Blonde Base, made with multiple mixed culture strains, and aged in French Oak Barrels for up to 15 months.
