Nope, it’s because every ingredient they use is grown or gathered locally, and every sip offers a taste of true Pacific Northwest terroir that simply can’t be recreated by anyone else.
Today’s complex and tangy Carpe Diem Manana is a prime example.
It’s an enticing blend of whole flower Cascade Hops, Vienna and Pilsner Malts, and the brewery’s signature addition of wild yeast.
The brewers age it in wine barrels for up to 18 months, allowing the yeast cultures to mature to their funkiest. Then, they dry hop it and bottle-condition it with Oregon wildflower honey for natural carbonation and just a touch of creaminess.
Tantalize your nose with a waft of pungent honeysuckle and lemon citrus, with a malty backbone of honey-coated toast. Each sip is a juicy flood of ripe peaches and apricots, met with the sour tang of grapefruit. It’s a full-bodied, well-rounded, and downright mystical experience with a complex, almost spicy finish.
