A Note on This Beer
Coolship Cerise actually tastes like a stroll through an orchard in Maine!
Allagash crafted this ruby-hued brew using a coolship — a rectangular tank with no top that allows native, wild yeast to fall into the wort as it cools. They don’t add any other yeast, so when you drink it, you’re tasting the natural microbes straight from the crisp Maine air.
Then the brewers aged it in oak wine barrels for over two years, smoothing the edges and allowing it to develop multifaceted flavors. Finally, they added over 100 lbs per oak barrel of locally harvested Montmorency and Balaton cherries! After several months of resting on the fruit, it’s finally ready.
When it comes out of those barrels, it’s bright red and tangy, with just a hint of wild funk. Bold, sweet, and tart cherry notes burst from every sip, along with subtle nuances of apricot, pie spice, and a delicate note of oak.
