A Note on This Beer
There are only 815 bottles in existence of today’s small batch Peach Sour Ale: MobCraft’s Diligence Peach. It’s extremely limited due to the time, patience, attention, and 100 lbs of peaches per barrel that went into capturing this vivid Bellini-like Sour at its prime.
First, Brett and peaches are fermented with French Saison yeast, then the brew is aged in oak on more real peaches, and then bottle conditioned with Brett and natural microflora found on the skins of the fruit. The result is complex tart, funky stone fruit flavors that finish extra dry, unlike any peach Sour we’ve experienced.
This unique brew generates so many questions while the tongue joyously investigates all of its many nuances. So we picked the brewer’s brain with a couple of them:

A:It has a nice intro to Brett, Diligence is dry and effervescent with strong fruit aromas and flavors that meld with tart and funky saison character.
