A Note on This Beer

When Birds Fly South released their Empress Rising: Mole Imperial Stout, one of our cicerone-trained writers freaked out a little! 

To help you understand his excitement, here’s a quote from his latest Empress Rising check-in:

“I’ll dream about this beer later! It’s so rich, it’s like sipping on drinkable chocolate.”

And we agree! It DOES taste like a fudge-drizzled Mexican hot chocolate, except it comes with an insane 14.5% ABV. 

Pop the top, and your mouth might as well be in Mexico City. Additions of rich vanilla and cinnamon spice soften the heat from chipotle, guajillo, and arbol peppers, while dark chocolate elevates the roasty espresso notes of the base beer. 

But if you want a sip, you’d better hurry, because we have less than 500 cans of Empress Rising: Mole. And once word gets out, our little stash won’t last long.

Birds Fly South was named one of the Top 10 Breweries in the Country at the World Beer Cup!

So, with this one, it has all the characteristics of a stout that I love. Super thick and fudgy, boozy, barrel aged...had we stopped there, I’d be 2 snaps up in a circle...but...the mole edition isn’t my cup of tea so I’m not a fan. It’s a really good beer and deserves high praise from those that like this altered style, just not my style. If I could get a do over with this brewery and try a version of this stout without the chilies, I’m sure I would give this big stars :)

Little in terms of bourbon; nice heat from the various spices but the mole overpowered for me. Would have really enjoyed if it was more bourbon forward.

Complex and incredibly tasty. It reminds me of Abuelita brand chocolate combined with chipotle and guajillo. Mexico in a can.

I loathe saying anything nice about anything SC for personal reasons, but this brew is OUTSTANDING! I’m not normally a fan of stouts, but it was perfect to sip on a chilly Chicago evening. The complexity of flavors is a treat to the taste buds. I wish I’d purchased more.

May have gotten a bad batch? Thin mouthfeel and sour/off taste. Little to no chili flavor, no darker notes. One of the few beers in my life that I have had to pour out. Disappointed because I love a good chili/stout combo.

Just not for me - the combination of dark beer and bourbon notes gave me chills they were so boozy... I wanted the sweeter elements to be more present and to help balance but the spice and bourbon were all I could get. Great for someone who likes these super dark Spicy flavors

Really interesting flavor, like nothing else I’ve ever had. It’s not spicy per se, but has a spiced flavor. And the texture is creamy. this is a great one.
