A Note on This Beer

Peppermint? Overdone. Evergreen? See you next year. In my opinion, the reigning empress of wintery flavors is salted caramel, and today’s 12.5% ABV Double Pastry Stout delivers it deliciously. 

The masterful team at Birds Fly South brings modern methods to old world style brews. Today that comes in the form of rich caramel sweetness that sings atop their deep, chocolatey Imperial Stout base!

But Empress Rising: Salted Caramel isn’t cloyingly sweet — a balancing dose of salt adds complexity and depth to the brew. Every sip is like a bite of a dark chocolate truffle filled with creamy caramel and topped with sea salt flakes. 

Fans are calling it a “mouthful of deliciousness,” “caramel perfection,” and “liquid dessert!”

a wonderfully rich stout with those clear notes of vanilla, caramel, and sea salt. The umame flavor from the soy sauce adds a good amount of complexity that will be a hit for some, and a deal breaker for others

they can’t all be winners. very sweet, not particularly what you’d expect in a barrel aged beer.

Very interesting taste, but I loved it. Much lighter than normal Stouts but packed with flavor. The caramel is the primary taste for me but the overtones of salt made the day. I don’t think it was too sweet so it was a great drink for me. I love this brewery and would definitely buy this again but in multiples next time.

Boozy and very syrupy. May have not been stored properly as there were a lot of off flavors that made this pretty undrinkable.

Don't know if my bottle was bad, but this was a sour tasting stout, and not in a good way. Possibly an infected bottle. Could not finish this one.
