About This Beer
The BlackStack crew — along with their feathered friends at Birds Fly South Ale Project — crafted this Saison over the course of about a year and a half.
The team brewed the spelt-heavy base with their house yeast culture before perching it in American oak barrels with Savignon Blanc and Cabernet Franc grapes for a little over a year. Then they refermented their promising potable in stainless steel for four more months before bottle conditioning it.
Tasting Notes
A soaring wine-beer hybrid emerged from the nest with an animated effervescence and drily tannic notes of grape must and oak. Its rosy hue and funky aromas sing out, inviting you to sample the spritzy sipper. Earthy nuances carry throughout the pour, with the grapes’ tangy brightness and subtle red fruit tones adding complexity.
