About This Beer
The award-winning brewers started by mixing barrels of Saison and spontaneously-fermented Ale from their cellar with a single cask of Dark Sour Ale. Then they combined the blend with carbonically macerated whole local blueberries and Montmorrency cherries. The technique, borrowed from winemaking, deepens the flavors of the fruit while keeping the acidity balanced.
