A Graff is basically a hybrid of cider and beer, created by blending apple juice and beer wort, and fermenting them together. But the terroir-obsessed Oregon brewers from one of Untappd’s 30 Best Breweries take it one step further to create today’s Graff.
The Ale Apothecary allows the fresh-squeezed juice of locally-grown apples to ferment with their own naturally-occurring wild yeast before blending it with an Ale wort. Then, they allow the mixture to ferment in oak barrels for 15 months!
When the 9.82% ABV tang has been tempered by additions of wild funk and nuances of oak, they bottle condition it with local honey for 100% natural carbonation.
It’s fruity, tart, tangy, funky, and absolutely mouthwatering, with soft, vinous notes and hints of sweet apple.
