A Note on This Beer
I don’t know if you’ve ever baked with almond flour, but my first attempt at making gluten-free muffins with this grainy substance was a total mess. The batter didn’t rise and the muffins were as dry and crumbly as a windblown sandcastle.
Luckily, New Image Brewing found a better use for almond flour — in their brand-new and incredibly unique Pastry Sour, I’m Just Here to Dance. This breakfast-of-champions brew is a collaboration with their buddies at Hidden Springs Ale Works, and it blows all of my baking attempts clear out of the water.
To make it, the brewers added a whopping 21 lbs of banana purée and nearly 7 lbs of Demerara sugar per barrel, along with almond flour, walnut meal, lactose, and a splash of vanilla. Each sip is like biting into a moist, freshly baked banana-nut muffin, topped with caramelized brown sugar and served with a scoop of candied lemon sorbet.
New Image just released this Sour in their Colorado taproom, and the lucky few who’ve tried it are rating it a praiseworthy 4.21 on Untappd! @derek raves, “Mmmm. Banana! New Image never fails to put out delicious brews.”
Now, you don’t have to buy expensive flours and watch your muffins deflate into puddles of disappointment. Why not leave the fancy baking to the experts, and crack open a can of this sumptuous Sour instead?
