A Note on This Beer

From ice cream to toothpaste, kelp is a key ingredient of so many things. Now, it’s also the key ingredient in beer.

You heard right! From the combined minds at Oxbow Brewing in Maine and Delaware’s Dogfish Head, today’s Kelp! I Need Some Honey is the seaweed-infused sipper you never knew you needed.

The brewers crafted this barrel-aged Saison with Maine-sourced grains, Icelandic Kelp, and Delaware wildflower honey. Then, they open-fermented the beer with mixed cultures, allowing layers of yeasty funk to elevate the honey sweetness and slight minerality of the kelp. A final conditioning with Oxbow Estate honey provides an extra touch of smoothness.

Each quenching taste dances between candied fruit and lightly salty, with a subtle umami flavor that lingers on the palate. As local fan @Theodora M. puts it, it “tastes like a mead, but with a touch of the ocean breeze.”

Which may sound a bit weird, but come on — you’re here because you’re an adventurous beer drinker! And, those with curious palates are always well rewarded.

Kelp is an interesting additional, the slightest hint on the finish, odd but fun. Smoky and oaky hints, dominant barrel and fish burps. Honey is upfront punch.

Not nearly as bad as I was expecting after having buyers remorse. Kelp!? But this beer is actually pretty good!

This is the second time I had this beer. I tried it when they did the first collaboration with Dogfish. I enjoy the subtle briny sea salt flavor and the oak and slightly sour taste from the barrel aging. This variety is definitely for someone who enjoys farmhouse barrel aged beers.
