A Note on This Beer
The Sour and Wild Ale specialists at The Referend Bier Blendery work out of a warehouse just a few miles from New Jersey’s capital, but everything they make tastes like it came straight from a quaint farmhouse!
They craft all their base beers with locally grown grain, and they work directly with farmers to get fresh, regional fruit. On top of that, every beer they produce is spontaneously fermented with natural, wild yeasts.
Take today’s Krak! Krek! Cognac Casks (2018). It’s a prime example of why Hop Culture called the taproom “an altar to Lambic tradition.”
It’s a blend of one- and two-year-old spontaneously fermented Golden Ales, hand selected for their softly tart flavors. Then, the Referend Bier crew added New York grown Morello and Montmorency cherries and let it re-ferment for an additional 9 months in Cognac casks.
Open the bottle, and you’ll be greeted with the vinous aromas of Port wine. Take a sip, and dark cherry flavors coat the taste buds. Nuances of stone fruit, grapeskin, and a bit of oak linger on the palate long after the last sip.
