About This Beer
La Baie Sauvage, “the wild berry,” is a Lambic aged on huckleberries, an untamed fruit, similar to blueberries, that has yet to be successfully cultivated anywhere in the world! Consequently, the fruit the world-class brewers at pFriem used in the brew had to literally be foraged for in Gifford Pinchot National Forest in southern Washington!
To craft it, the crew at pFriem started with a Lambic aged in oak for two years. Then they added the elusive berries to the Ale, allowing them to ferment for six months. Finally, they bottle conditioned La Baie Sauvage with champagne yeast for a scintillating sip.
Tasting Notes
Notes of bright, luscious jam and piney juniper intricately intertwine with tart, tangy nuances of lemon zest and pineapple. Whispers of oak carry underneath until a refreshingly crisp finish.
