About This Beer
The Wild Ale wizards at Side Project fermented a Pale Ale and a Saison with house yeast cultures and a Brettanomyces blend before maturing each one in Missouri oak foeders for 6-24 months. Finally, they mixed them together and bottle conditioned the blend.
Tasting Notes
It pours soft and floral, with a gentle funky tartness that tasters are calling “top tier.” Tangy lime zest nuances lift its mild tones of hayloft, chamomile, and horse blanket. Hints of honeydew melon and under ripe apricot mingle with the other flavors, giving the brew an impression of juiciness.

tastes bretty and complex. tropical fruits, hay, some oak, tart, dry finish. smell is Brett funk, wet grass, and oak. body is thin yet very well integrated.
