The brewers made this year’s batch by blending a number of their Lambic-inspired Wild Ales, all aged in oak and fermented with Cellador’s fantastic, house mixed cultures. Then, they took that funky blend and infused it with Blenheim apricots, one of California’s rarest fruits.
Known for their tart skins and especially sugary-sweet flesh, these coveted apricots make the ideal partner for the base blend in today’s beer. They impart powerful, floral stone fruit essences into the aroma, and give each sip layers of tangy, fresh-picked apricot flavor. A delightful, woody funk and medium acidity back up every semi-sweet gulp, making Le Con incredibly interesting and totally refreshing.
