About This Beer
Sotol is a spirit distilled from dasylirion, a desert succulent. Like Champagne and Scotch, a proper sotol has to be crafted within specific Mexican states. And it’s freaking delicious, with a bright, grassy flavor that’s bolder than many tequilas, less smoky than most mezcals, and typically has a verdant, pine-like note that might call to mind gin. Needless to say, a rich Tripel aged in these barrels is an utter treat!
Tasting Notes
Nuances of toffee and dried fruit melt into juniper and clove notes on every thick sip. Woody spice gorgeously mingles with the baking tones of the base beer, brightened by the barrels’ botanical character. I can promise you’ve never had a Belgian-style brew quite like it!
