Every time you savor a sip of Mont Sainte-Victoire: Spruced, you’re experiencing two years of dedicated craftsmanship.
The Saison’s story begins in the spring of 2019, when The Referend Bier Blendery brewed a base beer with locally-harvested New Jersey wheat, buckwheat, and rye. Then, they spontaneously fermented it all on New Jersey spruce tips foraged the same year.
After a year napping in oak barrels, The Referend team conditioned the brew on newly gleaned spruce tips — this time, from the 2020 harvest — and added a little wildflower honey.
Now, after months conditioning in the bottle, the final result is one exquisitely complex, refreshing Farmhouse Saison!
Enjoy on a lazy afternoon, when you can leisurely mull over every effervescent sip’s dance of green pine, fresh-tilled earth, and honeyed sweetness, all following a burst of citrusy funk. Or, cellar it carefully and allow the brew’s flavors to morph over time into a tangier, even smoother-bodied rendition.
