A Note on This Beer

With brewmaster Matt Brynildson at the helm, they create each beer with loving care and meticulous attention to detail. Today, we’re blessed to have one of their beautiful, barrel-aged Russian Imperial Stouts to share — the 4.38 UT-rated Parabola (2021)!
Every edition of Parabola is robust, complex, and full-bodied, but this year’s version features a special twist: instead of 100% bourbon barrels, they aged the base beer for one year in equal parts Buffalo Trace bourbon, Templeton 6-year rye whiskey, and Weller 12-year wheated whiskey barrels.
Firestone Walker crafts the recipe specifically for aging, and the barrels soften the beer over time, allowing for rounded and nuanced flavors to come through. The wheated bourbon adds a subtle sweetness, while the rye heightens notes of spicy pepper and crusty bread.
It pours a rich, dark mahogany, awakening the senses with notes of dark chocolate malt and vanilla. Flavors of rich chocolate and candied figs dance on the palate, while waves of caramell-y bourbon swim throughout.
