About This Beer
Bees transform the abundant nectar of the paulownia tree into a light and aromatic honey that’s been prized in China and Australia for thousands of years. Beekeepers all over now cultivate the tree so that its purple blossoms can provide forage to their hives.
Garagiste built upon the bees’ good work to craft this fine and delicate traditional Mead.
Tasting Notes
They fermented paulownia honey from Hawaii with a hybrid yeast typically used for white wines, accenting the honey’s mixed-floral-and-caramel character with nuances of green apple and honeydew melon. Its time aging in French oak added a rich and pleasant brightness to each layered sip, akin to notes of candied apricot.
