A Note on This Beer
I can’t think of many better ways to wile away a Sunday afternoon than sitting in the sunshine, munching on a ripe and juicy peach. Now, thanks to Peach Sabbath, I don’t even have to get all sticky-fingered doing it.
To create this tart and sippable Wile Ale, the crew at Varietal Beer Co. first crafted a puckering Wild Ale, capturing the native yeasts that blow across the rich fields of central Washington. Then, they aged the brew in wine barrels from more than 2 years, adding rich layers of grassy funk and hints of oak, along with just a whisper of grape skin.
Finally, they refermented the beer on 400 lbs of organic Summer Lady peaches from their friends at nearby CLS Farms. Open this bottle, and you can practically feel the peach juice dripping down your chin before you even take a sip.
