A Note on This Beer
The Referend Bier Blendery is renowned for its unique brews! As a highly experimental “blendery,” the brewers’ dedication to strict spontaneous fermentations, local sourcing, and lengthy development times means no two editions of one beer are exactly alike.
Which also means, once today’s 2019 vintage of Pomes Penyeach is gone, there’ll never be another quite like it.
To make this crisp, fruity sipper, the Garden State crew started with a Pale Wheat Ale and spontaneously fermented it in oak barrels for six months.
Then, they blended the Wild Ale with freshly pressed apple juice from their own backyard and refermented the hybrid in charred oak spirit barrels for another six months!
Finally, the brewers bottle conditioned the brew on Jersey wildflower honey for over a year!
The result is a refreshing, Cider-like brew, light, dry, and tart with scintillating notes of sharp, honey-drizzled apple, earthy oak, and a snappy, tannic finish.
