A Note on This Beer
This is the first time we’re featuring Ology Brewing on Tavour, and man-oh-man, are we excited about it. This rising Florida superstar is run by longtime homebrewer Nick Walker, who comes from a family of flavor-specializing scientists!
For real! As it turns out, his grandfather spent years forging discoveries into how people experience taste and what makes things appetizing. Meanwhile, Nick’s dad studied smell and how it affects us psychologically.
Needless to say, Nick (who has his own degree in biology) had a pretty big leg-up when he got into brewing. And today’s 2-beer introduction to Ology lets you decide just how big!
Here’s what comes in this science-backed, coast-to-coast IPA duo:
Resolved Enigma – West Coast Style IPA - 7% ABV
Though it’s billed as a West Coast IPA, Nick took out the combination of base malts usually seen in the style and went all in on Pilsner Malts only. Then, he “massively hopped” the brew both in the whirlpool and the dry-hop with Citra, Mosaic, and Simcoe.
The result is a beautifully clean-drinking IPA, whose crisp body allows the aromas and flavors of the hops to be on full display. Expect coniferous resin and a touch of florals right upfront, leading to delectable notes of orange and grapefruit peel. On the finish, there’s just the right amount of hop bitterness that reminds why West Coast IPAs are so crave-worthy.
Michigan Chinook DDH Sensory Overload – New England Style IPA - 6.5% ABV
As the name suggests, Nick went all in on the Michigan Chinook Hops here. Which is totally awesome, because we don’t see these tasty hops nearly often enough!
On the sip, this hazy juicebomb splashes big flavors of freshly-cut, luscious pineapple! Let the brew linger and notes of ruby red grapefruit and pine reveal themselves. Sensory Overload is succulently pillowy too, and while the senses do feel pleasantly overloaded right in the middle of each mouthful, it’s easy to keep gulping ‘til the can is empty.
*In just three years, Ology has made real waves out of their Tallahassee brewery. In addition to opening up TWO additional locations to accommodate for growth, Ology won a Gold Medal in the Double Hazy / Juicy IPA category at the statewide Best Florida Beer competition.
