For this one, they aged a rich base ale in bourbon barrels, allowing it to soak up plenty of luxurious cask character. But here’s where it gets really special: the production team took a field trip deep into the Appalachian mountains and gathered local cherrywood. Then they chipped it up, toasted it in their oven until it “was bursting with aromatics,” and used it to condition the brew.

We’re looking forward to the interplay between robust caramel, candied date, dark cherry, and brown sugar notes. And we expect the cherrywood to work in conjunction with the barrel to impart gorgeous notes of woody spice, stone fruit, and vanilla.
