A Note on This Beer
When Ex Novo Brewing decided to name their anniversary beers with Latin numbers, they apparently didn’t think ahead to year six.
Now here we are with Sex is Latin for Six Wild Ale. And there is NOTHING funny about that! It’s a straightforward statement of fact!
Although, if I’m being honest, I giggled when I saw it.
Luckily, the Tavour community is for adults, so I’m sure we’re all mature enough to deal with this in a grown-up manner. Have we pulled ourselves together? Okay! Here’s what makes this beer so incredible.
To create this one-off, 6th-anniversary release, the brewers first fermented it on whole-cluster Grüner Veltliner grapes picked from Oregon’s Wheatland Vineyards. They added no extra yeast, instead of letting the natural, wild microflora from the fruit do the work to create layers of tangy citrus, nuances of grassy funk, and subtle spicy notes of coriander and cardamom.
Then, they aged the brew for 8 months in Chardonnay barrels, imparting mild, vinous aromas and hints of oak that mingle with the crisp, snappy flavor of the grapes.
It’s light, smooth, tangy, and utterly drinkable — so refreshing you’ll want to tip it back while you sprawl in the sunshine, but elegant and complex enough to compliment the fanciest gourmet meal.
But with just 216 bottles to go around. You’d better act fast if you want to sample this brew.
