For starters, it’s hallowed ground. Since 2010, Jester King has spearheaded the American scene for Farmhouse Wild Ales. Their highly-desired SPON series steered their reputation as one of the world’s best small breweries by Craft Beer & Brewing as well as CultureMap’s best brewery in Austin.
Short for “Spontaneous Fermentation,” this bottle’s journey started with a commitment to time. For 2 whole years, the base matured in oak wine barrels while allowing the open air to ferment the beer naturally.
Post-fermentation, the Texas-based farmhouse brewery added in herbaceous, bright Red Shiso imported from Japan and silky, juicy Fuyu Persimmons from right down the road at Lightsey Farms in Mexia, TX.
The result? A beautiful blend of tart, tangy, natural flavors that combine with the tannic-like qualities enriched from the barrels and flesh of the fruit. At the finish, only the slightest sweetness comes through, like a friend telling a joke at the end of a great meal.
