About This Beer
This Gueuze-style beer is made from 100% spontaneously fermented Farmhouse Ales aged for one, two, and three years in oak puncheons, then combined to form a sublime sipper.
The team crafted each beer that went into the blend with the utmost consideration for local flavors. Not only did they capture native yeasts during the coolship phase (in 2019, 2020, and 2021), but they brewed the wort using aged hops, local malted barley, and local raw wheat. Even the water for SPON bubbled up from Texas’ Trinity Aquifer to JK’s own well!
Tasting Notes
A swirl of the glass invites you into a stunningly complex quaff with whiffs of apricot and hay. Taste it and you’ll discover a mildly tart brightness complementing an earthy funk. Notes of lemon zest and underripe stone fruit form a balanced weave with whispers of horse blanket and oak.
SPON’s impeccably layered character plus an easy-drinking 5.1% ABV make it an ideal companion to a tapas table or mezze spread.
