A Note on This Beer
“The best seltzer ever. Period.” @Ethan
With praise like this, it's a wonder Cellador doesn't make Seltzer more often — this is the first from the California crew!
And their addition to the Seltzer family is a special one. Today’s spin from the master crafters is a 6.8% ABV, barrel-aged Farmhouse Seltzer!
To craft Tepache, Cellador used ingredients that would most accurately recreate the Mexican-style beverage (Tepache is a lightly fermented drink with pineapple and cinnamon). By fermenting it with Cellador’s house cultures and infusions of real pineapple and freshly ground cinnamon, the brewers made a Seltzer with tangy punches of tropical sweetness and rich, bakery-spice kicks in every sip.
Then, they matured this batch in wine barrels for another notch of delicious complexity and a touch of oak — a luxurious and sophisticated taste that’s incredibly rare for the style.
Finally, the brewers conditioned it with a kiss of honey for a bit of sweetness in the back.
If you’re looking for a masterclass in Seltzer crafting, look no further. Cellador’s latest already has folks buzzing about their bubbly beverages, and you’re the only ones outside of their Golden State taproom with the opportunity to snag a taste!
Cellador’s beers are a recurring part of Hop Culture’s “New Beers to Try” segment!
