A Note on This Beer
Ask a Seattle beer geek where to go for a Saison, and you’ll often get the same answer — Holy Mountain Brewing Company.
Hop Culture calls this crew “one of the Pacific Northwest’s most iconic beer brands,” Eater places them among Seattle’s Best Breweries, and The Seattle Times once called them the city’s “beer grail.”
That actually makes a lot of sense, because outside of the Northwest, getting your hands on a bottle from Holy Mountain can be a serious quest! The vast majority of their small-batch brews get gulped down by thirsty locals.
Case in point: we have just 288 bottles of The Goat Rustic Brett Saison to go around. And, unless you’re on your way to Seattle right now, this is probably your only shot at tasting this bright, refreshing, delightfully complex brew.
To make it, the Holy Mountain crew use barley, oats, rye, and wheat, for flavors of bread crust and biscuit. Then, they added hints of lemongrass and a touch of funky complexity by fermenting and aging it in an oak Foeder. Finally, they bottle conditioned the brew with brettanomyces yeast for effervescent carbonation and subtle, grassy aromas.
This brew won’t last long once it hits the app. If you want to find out why the northwest’s Saison fans regularly make the pilgrimage to Holy Mountain, you’ll have to act fast.
