About This Beer
Holy Mountain took inspiration from one of their favorite Trappist beers when they crafted this subtle, rustic Brett Pale Ale. They began by fermenting a clean base with neutral Belgian yeast. Then the crew can conditioned it with Brettanomyces to give the brew a complex character that’ll continue to develop as it matures.
Tasting Notes
Pour a pint right now, and aromas of honey, biscuits, and tangy apricot lead you into a soft, clean sip that ripples with hints of citrus, stone fruit, and funk. Dried orange and lime nuances swirl into apricot skin, tilled soil, and just a whisper of horse blanket. Meanwhile, a measured, herbaceous bitterness leads to a dry finish featuring a touch of pith.
As multigrain cracker tinges linger on, chances are, you’ll already be heading back to your glass for more.
