Punch Magazine agrees saying that alongside Saint Adarius and Hill Farmstead “Holy Mountain makes the best Saisons in America.” Today we managed to get a stash of one of their only bottle releases to leave the Seattle taproom: the funky, the fruity, The Seer Oak-Aged Hoppy Saison.
It’s hoppy? Most definitely! Holy Mountain doubles down on The Seer with tropical Galaxy and citrus-spiced East Kent Golding (EKG) Hops -- not just in the boil but again with a dry-hopping session. The results deliver smooth notes of orange-passionfruit lemonade and honey lavender spice.
But is it funky? For sure! After brewing, Holy Mountain ferments The Seer with one of their house Saison cultures and age it in an oak foudre with Brett. After 4 months in oak, it’s bottle conditioned with even more Brett to give it some serious musky grapefruit-like funk character with an elegantly dry finish.
Thirsty? Aside from trade forums you won’t get to try this signature taste from one of the most sought-after Saison breweries in the nation. Grab The Seer now or be prepared to trade away some of your favorite cellar treasures to get it once we run out.
