Take The Subtle Blend: Foraged Blackberries. This beer takes you by the hand and gently guides you through nuances of hand-picked blackberries collected from the wetlands surrounding the brewery, traces of wild funk, and hints of oak and bready malts.
But as the name implies, it’s subtle. The brewers add just enough berries to accentuate the Wild Ale base, elevating the fruity notes from local hops, local grains, and a constantly evolving wild yeast culture.
It’s also much drier than you might expect, and not nearly as tart. Because while this beer is naturally fermented in open oak vessels, it only uses wild yeasts from nearby the brewery. And in the Skagit Valley, it rarely gets warm enough for those sour-making microbes to flourish.
Above all else, this beer is incredibly drinkable and intriguingly complex. But it doesn’t give up its secrets easily; it has to be tasted to be understood. Split a bottle with a friend, and explore its subtle layers of flavor.
