About This Beer
Thicket (Blend #2) exemplifies the expertise and attention to detail that make this crew one of the country’s finest Wild Ale outfits.
To make it, they began by combining a Flanders-inspired Red Ale with a touch of 5 year old, solera-aged French Oak Foedre Beer. Then they refermented the blend in their Missouri oak foedre with over 3,000 lbs of fresh Oregon blackberries from their pals at Decker Farms.
After nearly a year, the team bottle conditioned the brew, giving it a champagne-like effervescence and crisp, dry finish.
Tasting Notes
Each elegant quaff comes in with an assertive tartness that mellows into jammy berry tones with hints of oaky Chardonnay. Whispers of hay and earth follow, and when they mix with the bramble fruit’s juicy and sour tones, you might think you’re eating sun-ripened berries in the shade of a barn.
