Bloomberg called this Oregon crew the Most Exciting Brewery in the Pacific Northwest because of their unprocessed, natural ingredients and utterly creative brewing methods — like fermenting beer in a hollowed-out tree!
They only craft in highly limited batches, too, so getting a sip is a bucket list goal for craft fans across the country.

Sahati (2020) Finnish Sahti - 8.67% ABV
This is THE BEER that put The Ale Apothecary on the map. It’s a rarely-seen Finnish Sahti Farmhouse Ale, considered by many to be the world’s oldest beer style — and this one ranks No. 1 on Untappd!
It all began with a 200-year-old spruce tree on The Ale Apothecary’s property, hollowed out by the brewers to create a brewing vessel. They layered the bottom with tree branches to naturally filter and impart resinous oils into the beer. In addition to funky complexity from open fermentation, Sahati flows full-bodied from barley and rye malts. Honey provides natural sweetness, while Cascade Hops deepen the pine notes and add whispers of citrus and florals.

The Demon King of Friday (2020) Barrel Aged Wild Ale Blend - 9.12% ABV
Brewed with blackberries and cherry juice, The Demon King of Friday is an adventure into nature’s dark and jammy side. And, the berries are just the surface!
The brewers aged their Wild Ale base in freshly emptied Pinot Noir barrels. Then, they transferred the tangy, tannic elixir into Bourbon barrels with ripe blackberries to really seal in the boozy, juicy goodness. Next, they blended in another Wild Ale crafted specifically to meld with the first, then bottle conditioned it all with more cherry juice. Finally, they conditioned the brew further with Oregon honey for added sweetness and body.

Ralph (2020) Barrel Aged Wild Ale - 6.83% ABV
Paul Arney, The Ale Apothecary’s founder and head brewer, named this special Wild Ale after his father. But, that’s just one of the many things that makes Ralph special — the brewers used rarely-seen white spruce tips and local wildflower honey to brew it, then aged it for 12 months in Oregon wine barrels!
Every sip brims with jammy fruit and earthy, clover honey notes, backed with hints of lemony citrus, fresh spruce, and wild funk. It’s practically as much of an honor to drink it as it is to be Ralph Arney.

Sauvie (2020) Barrel Aged Wild Ale - 6.83% ABV
Named after Sauvie Island in the Columbia River and aged in Oregon wine barrels, this brew offers a true experience of the Pacific Northwest!
Crystal Hops hand-harvested from the island give Sauvie deep aromas of dew-tipped trees and fresh earth. Joined with The Ale Apothecary’s house yeast and doses of Mecca Grade Vanora and Rye malts, this brew is both approachable and complex! Peachy tartness rises up with woody spice, backed with whispers of grape tannins. The Pacific Northwest sure tastes exquisite.

Walking Fish (2020) Barrel Aged Wild Ale - 9.19% ABV
Finishing off the lineup is something totally new from The Ale Apothecary! The brewers have allowed this Wild Ale to condition carefully in the bottle since November, making for elegant natural carbonation and mellow-yet-distinct complexity.
As with Sauvie, the brewers used Sauvie Island Crystal Hops for this brew, but with a key difference — they transferred the dry-hopped beer directly onto freshly-harvested hops for even MORE flavors and aromas! They also fermented the brew with honey to impart natural sweetness and effervescence, left it unfiltered to allow the wild funk to shine, and aged it in Oregon wine barrels for woody nuances.
*So few people have been able to taste this beer, it doesn’t even have an Untappd page yet!
While it’ll be super tempting to taste these brews side-by-side, we do recommend savoring them individually. After all, we don’t know when, or if, we’ll be able to get such a lineup from The Ale Apothecary again!
