About This Beer

The very first bottled Wild Ale that Elder Pine ever released immediately grabbed the attention of fans — The Waves Have Come earned a sky-high 4.35 Untappd rating. Now, they’ve taken that same base beer and made it even more impressive with What the Waves Left Behind.

To craft this beauty, the Elder Pine crew first aged the beer in a variety of red wine barrels for a full 28 months, then added second use Pinot Noir grapes.


Tasting Notes

Let a sip linger on the tongue, and you’ll soon find yourself twirling through layers of multi-faceted complexity. Notes of pear balance against bright acidity, while nuances of barnyard funk give way to earthy oak and subtle grassy flavors. Vinous notes recall a dry rosé, while lactobacillus and brettanomyces add hints of wild funk and a tangy, lemon zest-like character.

this clearly isn’t my cup of tea. I don’t taste any barrel aged anything in this wild ale, and it’s clearly too sour/ tart for my liking.

Dry, effervescent, mild tartness/acidity. Very smooth. Wild and funky but not too much. Mostly picked up the grapes personally but may have perceived other dark fruits here and there. Notes of red wine but mouthfeel nods towards sparkling cider.
