Probe further, and they’ll dive into great detail about the nuances of their wine-beer hybrids like Chubby Unicorns Stout made with Cabernet Sauvignon grapes and cocoa nibs. Or their Cabernet Blanc barrel-aged Animal (Farm)House Saison. They’ll gab about mixed culture, spontaneously-fermented Saisons that they age for 12-24 months.
Give them the time, and you’ll hear all about their crowd-sourced, barrel-aged pastry Stouts. For these, fans chip in with their buddies to purchase a whole barrel of beer to themselves and pick out their favorite dessert ingredients to add to the brew. The most popular choices have been marshmallows, peanut butter, coconut, and caramel!
