I’m going to go out on a limb and guess you’ve never been to the tiny town of Eau Claire, Wisconsin. It’s a lovely place, but it’s probably not at the top of most tourist itineraries.

Except, of course, for beer tourists, who flock to the city in droves for a taste of The Brewing Projekt! And, with good reason — Food & Wine included this crew as one of their 19 Craft Breweries Worth Going Out of Your Way For!

Pro-tip: it’s even more worth the trek if they’re releasing something from their Things of That Nature Series. Every time we’ve managed to snag one of these hop-forward brews, you’ve rated it 4+ on Tavour!

After tasting today’s Things of That Nature: Once in a While, I think we’ve got another high rating coming!

This Imperial IPA is all hopped up with Citra, Mosaic, and Idaho 7. Once its flavors of ripe berries, tangy tangerines, and drippy peaches hit my tastebuds, I just want to keep on sipping. Not ‘once in a while,’ but repeatedly and with gusto!

And, with this brew’s incredibly soft and smooth body, I actually can! Just gotta keep an eye on that 8.68% ABV.

If you ever happen to find yourself in Northwest Wisconsin, by all means stop by Eau Claire to visit The Brewing Projekt’s funky taproom (and maybe check out the city’s thriving arts scene). But until then, you can grab a can of Once in a While and find out for yourself why so many fans are happy to make the drive!
